Chai, the proper way
For Masala Chai, Mumbai Classic, Kolkata Street Cha, Bombay Cutting, Jaipur Royale, Parsi Heritage and Punjabi Delight. Quantities are per cup.
1. Boil half a cup of water. A little ginger, crushed goes in well here.
2. Add a teaspoon of tea and let it simmer for a minute or two.
3. Pour in a tablespoon of milk. Let it rise, then keep it on low for 2 to 3 minutes.
4. Strain, sweeten the way you like it and drink it hot, preferably with cookies.
Small things that make a big difference
• Let the kettle rest for a few minutes before pouring over green or white tea. Boiling water turns them bitter.
• Squeeze a little lemon into butterfly pea tea and watch it change from blue to purple. A fun fact that never gets old. And a little more can make it pink.
• For iced tea, brew it double strength and pour it over a full glass of ice.
• Don’t squeeze the leaves. Lift them out gently.
• Good whole leaves can be steeped again. Give the second cup an extra minute.
• Keep your tea in an airtight tin, away from sunlight and strong smells.
